Stevia is a plant-based “sugar substitute,” although not an artificial sweeteners.The leaves are mixed with water, ground into a paste, and then dried into powder or filtered into liquid. Stevia can be 40 times sweeter than sugar, so makers dilute the leaf mixture with chemicals or alcohol during the refining process. Some manufacturers maintain the natural composition of Stevia by using purified water. Minimal processing yields Stevia into the raw product, like turbinado sugar. This form and the purified powder form come largely in sugar packets.
