The art of dessert baking requires sheets and pans with specific configurations for proper cooking. Pans for double-layer cakes are round with 90-degree sides, while pie pans are round with sloped sides. Brownie and single-layer cake pans are squares or rectangles up to 9 x 13 inches, and baking and cookie sheets are large rectangles with half-inch sides so the heat gets to the dough for quick, moist baking. Other dessert cookware includes muffin and cupcake pans with 6 or 12 cup-size reservoirs shaped to form rounded muffin tops with contoured bottoms. Most dessert pans are carbon steel with nonstick coatings so the desserts slide easily from their molds. Casserole cookware may be round with deep sides, rectangular with shallow sides, or loaf-shape with medium depth. It includes slow-cook Dutch ovens and crockpots with lids and handles for use on a cooktop or put in the oven after a stovetop start.
