The art of dessert baking requires sheets and pans with specific configurations for proper cooking. Pans for double-layer cakes are round with 90-degree sides, while pie pans are round with sloped sides. Brownie and single-layer cake pans are squares or rectangles up to 9 x 13 inches, and baking and cookie sheets are large rectangles with half-inch sides so the heat gets to the dough for quick, moist baking. Other dessert cookware includes muffin and cupcake pans with 6 or 12 cup-size reservoirs shaped to form rounded muffin tops with contoured bottoms.
